Hajjah Naziha Recipe 1

Smooth Red Lentil and Carrot Soup

Nutritional Benefits

Red lentils are low in cholesterol, have good amounts of folate, magnesium, fibre, low in calories, lot of minerals like copper, iron, manganese, potassium , etc.

Carrot is high in Beta-Carotene and fiber. Also, a good source of Vit-C, Vit-K, Vit – K , Manganese, Iron, Copper , potassium.

Potatoes are nutritious and healthy food rich in Vit- A, Vit-C and B-complex vitamins, with minerals such as magnesium, iron, copper, potassium, manganese .They are filled with fibre, fat-free, alkaline food. It has anti- cancer properties too. (Surely no one ever believed in potato being so nutritious).

Onions have vast medicinal properties. Onions are high in Vit-C, folic acid, biotin, chromium and calcium. Have strong anti-cancerous properties too

Tomato s are an excellent source of Vitamin – C , biotin, molybdenum and Vit-K , Vit- A, copper, magnesium, potassium , phosphorous , Niacin.

Eggs are an excellent source of high-quality protein. More than half of the proteins in an egg are found in egg white, with lower amounts of fat than In yolk. The whites are rich sources of selenium, Vit-D, Vit- B6, Vit- B12, with minerals like iron, copper and zinc. Egg yolk has fat, fat soluble vitamins like Vit-A, Vit- D, Vit- E, and Vit-K.

Milk is a rich source of calcium, also has proteins and fats. Apart from that it has Vit-K, strontium, magnesium.

Mint is low in fat , calories. It is a good source of Vit-A, magnesium, potassium, folate, manganese, calcium , iron and copper.
